has been a friend since school days. We were together for a year,
with my first cousin Rob Wright, in Form 5 (1964) at Suva Grammar
School at Veiuto, Suva.
My strongest recollection of those days, no it's not the school,
is of Rob and me helping Jason build one of his outboard boats
under his house in the Domain in Suva. We received regular refreshments
from Mrs Mack, I recall. The boat was a concept design with a
central stearing console and ribbed sides - a first for Fiji!
Jason later used the boat to help out on the Rewa River during
the floods one year, transporting none other than the Prime Minister
of Fiji at the time. Mack currently lives and works in his "boathouse"
in Southport, Queensland, where he crafts boats, furniture, Grandfather
clocks, and anything else you ask him to design. Such is the creativity
of this master craftsman from Fiji. Jason remains a true friend
of mine. Knowing of my interest in cooking, and being a regular
visitor to our hot food shop in Southport, on 11 April 1989 he
crafted this recipe for my 40th birthday, unknowingly as his contribution
to Mike's AsiaPacific Kitchen!
